Homemade Egg Noodles!

This is another family favorite, especially when it gets cold outsid and the holidays come around. But cold or not, these noodles are delicious and a perfect dinner idea year-round! I recently made these for my Thanksgiving get together, and between six girls we nearly ate all of them! These go perfect by themselves, or over some homemade mashed potatoes, or really with anything! They always go super fast at my family get togethers, and surely they will at yours too! Here's what you'll need:

  • 3 eggs
  • 2 cups of All-purpose flour, unbleached
  • 1/2 tsp salt
  • Water (if needed)
Place the flour and salt in a medium-sized mixing bowl, and mix to combine them. Add the eggs to the mixture and combine. If your dough comes out dry, add about a teaspoon of water and mix it again. If it comes out sticky, add a little bit of flour and mix it again. Repeat this process as neccessary until you have a nice, loose ball of dough. Spread some flour on a flat surface, such as a countertop. put the dough ball on the floured surface and knead it until you have formed a smooth ball. Sprinkle some flour over the ball, cover it with a kitchen towel, and let it rest for about 30 minutes. Next, take a rolling pin and roll out your dough into a fairly thin sheet. Next, you'll use a pizza cutter to cut your noodles into strips about 4cm by 1cm. Once they are all cut, toss them into a large pot of salted boiling water. I like to add about 6 or 8 chicken boullion cubes to the water, for a chicken noodle taste. Cook these for about 10-15 minutes and serve.
